EVERYTHING BAGEL POTATO SOUP/DIP -

Serves 2 - 4 _ INGREDIENTS: • 2 Russet Potatoes, chopped • 1/2 cup Cashews, covered and soaked in warm water for 1 hour • 6 Scallions, green parts only, finely chopped • 2 tbsp Trader Joe’s Everything But The Bagel Seasoning _ DIRECTIONS: 1. Steam potatoes in steamer pot for 20 minutes or until soft when pierced with fork. Remove and let cool. 2. Add soaked cashews, with water they were soaking in, potatoes, and seasoning to blender. Add additional 1 cup of water and blend until smooth. You may need to add more than 1 cup of water to achieve desired consistency. If adding more water, add just a small amount at a time. We kept it thick to use as dip too. 3. Pour soup/dip into medium sized bowl and stir in chopped scallions. Combine well. 4. Pour soup/dip into serving bowls and top with additional Everything But The Bagel Seasoning 5. Enjoy as a soup or dip with crudités!
