Cauliflower Gnocchi Al Funghi Arrabiata

Serves 4 people or 2 Homegrown Healers

_ INGREDIENTS 1 Onion, thinly sliced and quartered 4 cups Mushrooms, thinly sliced 4 packages of @traderjoes Cauliflower Gnocchi (see Tip#2 below ) 2 cups Tomato Sauce of your choice (see Tip#1 below - recommended brand: Seggiano Organic Arrabbiata Chili Sauce) _ DIRECTIONS 1. Slice onion and sauté in a large pot over medium heat in a small amount of water until translucent. 2. Add mushrooms and cook for 5 minutes. Add Trader Joe’s cauliflower gnocchi. Cook for approx 10-15 minutes stirring every minute or so to get all gnocchi defrosted and warmed through. (May need a splash of water to prevent sticking).

3. Add tomato sauce and cook for a few more minutes until sauce is thoroughly warmed.

4. Plate and serve. To take it to the next level, top with MM Brazil nut parmesan, if desired. _ Tip #1: Alternatively you can use MM sauce recipe from Liver Rescue ratatouille! Just add chili powder, red chili flakes and onion powder & garlic powder to make it arrabiata.

Tip #2: You can also cook the gnocchi as per the packaging then combine all the ingredients if you so desire. We felt ok to eliminate the extra step and it worked out fine.
