_ We just couldn’t hold back in sharing this one with all of you. It is a take on @medicalmedium wild blueberry pancakes that we created. It reminds us of those cinnamon crunch toast cereal days... remember that toxic cereal we used to eat as a child?! You will not believe that it contains no bad sugars, dairy, gluten, eggs and msg. _ It is decadent and is a great family treat for those of you with kids. For those of us healing, it is a nice once in awhile treat. Enjoy! _ INGREDIENTS: FOR THE PANCAKES • 2 ripe Bananas, peeled • 4tbsp Raw Honey • 1 tsp Baking Powder (see Tip below) • 1/2 tsp Sea Salt • 1/2 cup Water • 2 cups Almond Flour
• 1/2 cup Potato Starch • 1 tsp Cinnamon • 1/2 cup Raisins (See Tip below) • 1 tsp Coconut Oil • Maple Syrup _ INGREDIENTS FOR THE NICE CREAM • 2 frozen Bananas • 1 tsp @vimergy Chaga Powder • 1/2 tsp @vimergy Reishi Powder • 1/4 tsp @naturalzing Vanilla Bean Powder • 1 tbsp Maple Syrup _ DIRECTIONS:FOR THE PANCAKES 1. For the batter, blend the bananas, honey, baking powder and sea salt together with the water and blend until smooth. 2. Add the almond flour, potato starch and cinnamon and continue to blend until a thick, even batter forms. 3. Stir raisins into batter (do not blend). 4. Line 2 baking trays with parchment paper and lightly oil with coconut oil to prevent the pancakes from sticking. 5. Spoon the batter onto the baking trays making 3” to 4” pancake circles approx 1/8” - 1/4” thick, using the back of the spoon to smooth the batter evenly. 6. Bake the pancakes at 325 degrees Fahrenheit for 8-10 minutes until the edges turn golden, then flip and bake for 2 minutes more until both sides are evenly golden. _ DIRECTIONS FOR THE NICE CREAM 7. Blend all the ingredients in the blender until smooth, thick and creamy ice cream texture forms. 8. Use an ice cream server to serve nice cream over the pancakes, drizzle with maple syrup and enjoy! _ TIP #1: It can be difficult to find good, clean baking powder. For a baking powder alternative to 1 tsp baking powder, mix 1/4 tsp baking soda w/ 1/2 tsp lemon juice _ TIP #2: Look for raisins that are unsweetened and don’t contain added sugars, oils and or citric acid. _ For more sweet treats like this, check out our meal plan subscription service!
