Chickpea Cauliflower Tacos

You asked... we delivered! The chickpea-cauliflower rice "meat" has a nice texture for a meat replacement making these family friendly to serve non-plant-based friends & family members at your next event 😊The hot sauce is optional. For those of you who truly miss your hot sauce, this is the cleanest hot sauce we have found & is a nice lil' treat for those special occasions. Most hot sauces are made with vinegar which isn't good for us. This hot sauce is made w/ ACV (apple cider vinegar) which still isn't great but the best option for vinegars if you are going to use. The only thing that could make this hot sauce better is if it were organic and @sietefoods used lemon juice perhaps instead of vinegar. But, wow, the flavor on top of these tacos was an added touch of deliciousness for the spicy palate & you don't need much to enjoy the strong flavor. 🌮

INGREDIENTS: CHICKPEA- CAULIFLOWER RICE - 1/2 head Cauliflower - 15oz can Chickpeas or 2 cups cooked Chickpeas - 1 tsp Onion Powder - 1 tsp Cumin - 1 tsp Paprika - 1 tsp Chili Powder - 1/2 tsp Sea Salt • SUN GOLD TOMATO SALSA - 1 pint Sun Gold tomatoes, quartered - 1 Red Onion, diced - 2 cloves Garlic, minced - 1 Purple or Red Bell Pepper, finely chopped - 2 Jalapeño Pepper, finely chopped - Sea Salt & Pepper to taste • QUICK GUACAMOLE - 1 Avocado - 1 cup Cilantro, chopped - 1 tsp Onion powder - 1 tsp Garlic Powder - 1/2 Lime, juiced • INSTRUCTIONS - Rinse and chop cauliflower florets into small bunches. Blend in small batches of 3-4 pieces at a time in blender until rice consistency - - Mash cooked chickpeas and mix until well combined with cauliflower rice. - Season chickpea-cauliflower rice mixture with next 5 ingredients: onion powder, cumin, paprika, chili powder and sea salt - Combine all 5 salsa ingredients: sun gold tomatoes, red onion, bell pepper, jalapeño and garlic. Season with sea salt & pepper as desired - De-pit and remove skin of avocado. Fully mash avocado and combine with cilantro, onion and garlic powder, and lime juice. Mix well. - Top each almond wrap with, in order, chickpea-cauliflower rice, sun gold tomato salsa, guac and if desired, siete hot sauce
