Pea Guacamole on Nori Squares

Pea Guacamole on nori squares is an awesome fat free, salt free healing snack that has secured a spot in the rotation from now on!


This is a recipe from Life Changing Foods Revised and Expanded by Anthony William with minor adjustments in ingredients and procedure paired with nori squares.


Peas are a healing comfort food that deliver wonderful benefits for the heart on both a physical and emotional level. They are also powerful remineralizers that are restorative for deficiencies, hair follicles, nails and connective tissue.

I added the red pepper flakes and did  it use any salt. I shortened the process by adding all ingredients to the food processor at once.


Pea Guacamole

Ingredients:

* 2 cups frozen or fresh shelled green peas

* ¼ cup freshly squeezed lime juice

* 1 garlic clove, minced

* 2 tsps finely chopped ripe jalapeño

* ¼ tsp ground cumin

* ¼ tsp ground coriander

* ½ tsp sea salt (optional)

*1/8 tsp ground red pepper flakes

* ⅓ cup chopped tomato or grape tomato

* ¼ cup chopped onion, any color

* ¼ cup loosely packed cilantro, chopped

*Nori sheets of choice - look for ones with organic seaweed as its only ingredient.


Directions:

Steam the thawed or fresh peas for 3 to 4 minutes, until tender. Remove and rinse under cold water, until cool to the touch.

Place the peas, lime juice, garlic, jalapeño, tomato, onion, cilantro, cumin, coriander, and sea salt (if using) in a food processor. Process for 1 to 2 minutes, until smooth.

Transfer to a bowl and serve immediately or refrigerate until needed.

Serves 2

Recipe Notes:

* Look for organic peas whenever possible.

* While high-quality sea salt or mountain rock salt is an optional inclusion in this recipe, the recipe is more healing without salt. Over time, you may wish to reduce or exclude the salt.
