Roasted Garlic Mashed Cauliflower Potatoes with Mushroom Gravy

As you continue along your healing path, you will most certainly come to know the humble potato as the most comforting of comfort foods. Loaded with anti-pathogenic compounds, fortifying nutrients and grounding energy, this tasty tuber has the ability to nourish and calm all body systems in a very unique way. Once you have freed yourself from the over-salted standard diet, your tastebuds will become receptive to the subtle natural mineral salts present in potatoes. They will become a source of genuine comfort and safety. Like a warm blanket on a cold winter evening.
I found this recipe to be the most delicious mashed potato with gravy recipe I have ever had. I pray it brings you comfort and joy as well.
INGREDIENTS:
POTATOES
3 lbs potatoes steamed
1 head cauliflower steamed
1/2 bulb garlic roasted (8 cloves)
1 tsp garlic powder
1 tsp onion powder
MUSHROOM GRAVY
1 sweet yellow onion, finely chopped
2 garlic cloves, finely grated
3 cups baby bella mushrooms, sliced
1 tsp fresh rosemary, minced
2 tbsp cassava flour
1 tsp chickpea flour
1 tsp gluten free sprouted oat flour
1-1/4 cups MM healing broth for thick gravy (add 1 cup more for loose gravy)
ROASTED GARLIC MASHED CAULIFLOWER POTATO DIRECTIONS:
Steam the potatoes and cauliflower by whatever method you prefer until soft. The whole potatoes took about 40 minutes in my glass steamer and the cauliflower took about 15 to 20 minutes in a pot with a steam basket on the stove top.
Roast the half garlic bulb with the skin on at 350° for 20 to 25 minutes.
Once cooked, allow everything to cool enough to handle.
Squeeze the garlic from its casings and add it to a large mixing bowl along with the potatoes and the cauliflower. Using a potato masher, mash the potatoes, cauliflower, and garlic altogether. Add the 1 tsp garlic powder and 1 tsp onion powder and mix well. You can also add salt and pepper to taste, but I didn’t add any other seasonings and they were delicious!
MUSHROOM GRAVY DIRECTIONS
1. Sautee the onion and garlic in ¼ cup of broth or water over medium heat for 3-4 minutes adding 1 tbsp water or broth to prevent burning if necessary.
2. Add the sliced mushrooms and rosemary then raise the heat to medium-high. Saute for 8-9 minutes more or until most of the water released by the mushrooms has cooked off.
3. Add the 1 cup of broth.
4. Add in the flours and stir quickly to smooth out any clumps of flour.
Bring the mixture to a simmer.
5. When gravy has thickened to your liking, remove the pan from heat and serve.
TIP:If at any point the gravy becomes too thick, simply thin by adding a bit more broth. If you want it thicker, add a bit more flour.
